A mixture of finely chopped meat (most often pork), herbs and spices, generally packed into a casing (traditionally the intestines of the animal). The sausage is then cooked or cured. The ground meat used for pork sausage comes mainly from a cut of the pig called the shoulder butt. Aditional ingredients added to the meat mixture can yield ethnic or specialty sausages, including Andouille (French/Cajun), Bratwurst (German) and Chorizo (Mexican and Spanish).
Bologna is a kind of sausage. The meat got its name from the Italian town of Bologna. By the late 19th century in England and America, "bologna" had become the generic name for any type of pork sausage from the Italian town.
