Pat's Breakfast Sandwich

  • 3 slices hot buttered toast
  • Philadelphia or other good quality full fat cream cheese
  • 3 or 4 slices bacon - cooked
  • 2 cooked sausages
  • 1 sliced tomato - fresh or sauteed
  • 2 sliced mushrooms - sauteed
Take the first slice of toast and spread a layer of cream cheese. Lay slices of bacon on that. Then, add another layer of toast. Next, split the cooked sausages and place that on top followed by the sauteed tomato and mushroom. Top with the last piece toast.

Depending on the size of your toast, this can be light or very filling breakfast.

To saute the vegetables, place them in a small frying pan over medium heat with a Tablespoon of butter. Stirring occasionally, cook until the mushrooms are tender and just starting to brown.
