Cheesy Sausage And Egg Bake

  • 1 pound bulk pork sausage - cooked and drained
  • 1 1/2 cups sliced fresh mushrooms (4 ounces)
  • 8 medium green onions - sliced (1/2 cup)
  • 2 medium tomatoes - chopped (1 1/2 cups)
  • 2 cups shredded Mozzarella cheese (8 ounces)
  • 1 1/4 cups original Bisquick baking mix
  • 1 cup milk
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons chopped fresh oregano leaves or 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon pepper
  • 12 large eggs
I really liked the flavors in this breakfast bake. I used a combination of regular Mozzarella, Cheddar and smoked Mozzarella cheeses. I also opted to use chopped onion instead of green onion. The baking mix gave this dish a bit of biscuit-like texture and flavor that I liked a lot. (This recipe was submitted in 2002. It was tested and photographed in April 2015.)

How To Make A Cheesy Sausage And Egg Bake

Heat oven to 350 degrees. Grease rectangular baking dish, 13x9x2 inches. Layer sausage, mushrooms, onions, tomatoes and cheese in dish.

Stir remaining ingredients until blended. Pour over cheese.

Bake uncovered 34 to 36 minutes or until golden brown and set.


Cooking Notes From Mr Breakfast:

When I tested this recipe, I cut the ingredients in half and used an 8x8-inch baking pan.

If I make this again, I'd be inclined to just eyeball the ingredient amounts. That is to say... after my initial layer of sausage, I'd lay in just enough mushrooms and tomato to make even layers.

If you don't have Bisquick, you can still make this. Just omit the Bisquick and cut the milk to 2/3 cup. Everything else stays the same.




In addition to eggs, cheese and sausage, this breakfast casserole includes, mushrooms, tomatoes and green onions. Requires Bisquick or similar baking mix.

One of my favorite recipes on your site! I make it as directed except I sometimes change the kind of cheese. I like it best with a mix of Cheddar and Pepper Jack cheese. It comes out great every time.
