Potato Sausage Bake (No Egg)

  • 1/2 package Simply Potatoes Southwest Style Hash Browns
  • 1/4 pound breakfast sausage
  • 1/4 pound cheddar cheese
  • 1 can biscuits (5 count like Grands)
Crumble and cook sausage in skillet. Put aside. Cook hash browns in skillet with a little olive oil or margarine, stirring regularly until cooked.

Combine sausage and hash browns and grated cheddar in 8x8 baking pan. Pat biscuits out to form a crust on top.

You can bake it now or cover it and put it in the refrigerator to bake in the morning. Everything is cooked except for the biscuits. So you just need to bake it on 350 until the biscuits are done.

Note From Submitter:
I make this in the evening and put it in the fridge and my husband pops it in the oven in the morning. No fuss and just set the oven timer and check it!



This is an egg-free breakfast casserole for those who don't eat eggs. You could double it to use an entire package of potatoes etc and still get a good result (use bigger baking pan).

What's not to love. Sausage and hash browns and biscuits... Oh my! I did however feel this would be a total, absolute home run if it was served with gravy on top. Next time...

I don't understand what is meant by pat out the biscuits to form a crust. A crust over the sausage mix. Or do I put the mix on top of the biscuit? Can you please clarify? How long do you leave it in the oven? Is this good the next day or should it be eaten the same day?

I have used the same ingredients but in a different order: biscuits line the bottom of the dish followed by sausage, topped with cheese and then potatoes sprinkled on top and put under the broiler to brown. Very good!
