Buzz Lightyear Eggs

  • 4 large eggs
  • 1 medium potato
  • 1 carrot
  • bacon / sausage / ham (as much as you like)
  • 1/4 teaspoon salt
  • 3 Tablespoons vegetable or canola oil
Cut potato and carrot into small pieces - 1 to 1 1/2 inch. Place them in the pan with the oil and stir constantly (medium heat). Take out of the pan when the potatoes are soft.

Hard-boil the eggs while sauteing the vegetables. After the eggs are hard-boiled, cool them under cold tap water, remove their shells and cut into 1 to 1 1/2 inch pieces.

When using bacon, place it on a pan and wait for it to be cooked (like you normally do) then cut it into 1/2 inch pieces. If using sausage, cook it until browned and cooked through and then crumble or cut into 1/2 inch pieces. For ham, warm it and brown it in a frying pan and cut that into small pieces.

To serve: In a small bowl (for one person), place a layer of the carrots and potatoes then a layer of eggs and finally a layer of ham/sausage/bacon. Do this 2 times in the bowl. (if you want you can also add some grated cheese of your choice).

Recipe serves 2 people.

I have no idea why recipe submitter, C.M., called these 'Buzz Lightyear Eggs'. I'd assume there's a connection with the 1995 movie Toy Story and the character Buzz Lightyear but I haven't figured out what it is.
