Campfire Breakfast Bake

  • 1/2 bag shredded hash browns - thawed
  • 1 pound bulk sausage - cooked and crumbled
  • 1 onion - chopped
  • 2 cups shredded cheese
  • 6 large eggs - beaten
  • salt and pepper - to taste
In a deep cast iron skillet or dutch oven, cook sausage until nearly done. Add onions and cook until just softened. Layer hash browns and egg on top, then sprinkle with 1/2 the cheese. Cover with foil or a lid and place over coals to cook for 20 minutes or until eggs set in the center. (Note - make sure you have coals and not a roaring fire or your eggs will burn.)

When done, spread the rest of the shredded cheese on top and bake uncovered 1 to 3 minutes or until cheese is melted.

Serve hot and enjoy!


A great breakfast for camping trips. Also great in the oven at home. Filled with potatoes, cheese sausage, egg and onion.

Needed more seasoning. I also doubled the eggs and the cheese.
