Overnight Sausage & Peach Casserole

Overnight Sausage & Peach Casserole

(6 servings)    Printable Version
  • 2 cups Bisquick baking mix
  • 1 cup milk
  • 1 16-ounce package of brown and serve sausages
  • 1 16-ounce can of peach slices in heavy syrup
Preheat oven to 350 degrees.

Prepare a 12x12 inch baking dish with a generous coating of cooking spray.

In a medium bowl, mix the baking mix with the milk.

Drain the peaches, but save about 1/2 cup of the syrup.

Cut the sausages into quarters and cut the peaches into bit-sized pieces.

Add the Bisquick batter to the baking pan. Then add half of the peaches in a layer and half of the sausage in a layer. Repeat layers with remaining peaches and sausage.

Bake for 20 minutes. Remove from oven and allow dish to cool at least 20 minutes before covering with plastic wrap and refrigerating overnight. Note: also refrigerated the reserved syrup from the peaches.

The next morning:

Bake casserole 20 minutes in the oven set to 350 degrees.

To create a special Peach Maple Syrup topping: combine the maple syrup and reserved peach syrup in a small saucepan over medium-low heat.

To serve cut the casserole into individual portions and top with warm syrup.

I was skeptical before I first tried this casserole at a church brunch. But after one bite, I was sold and asked for the recipe. I hope you like it too.

Mr Breakfast would like to thank bethy for this recipe.

I use to serve this recipe about 25 years ago. My Son just phoned asking for a copy. I couldn't find it anywhere. He went to your web site and bingo we were both thrilled to have it again. Thank you.
