Southwestern Skillet Potatoes

  • 12 link sausages (pork or turkey) - sliced into small pieces
  • 1 medium green pepper - diced
  • 1 medium red pepper - finely diced
  • 1 small onion - diced
  • 4 cups of shredded potatoes - drained well (squeeze as much liquid as you can from the potatoes)
  • 1 and 1/2 teaspoons chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • black pepper to taste
  • 1 and 1/4 cups shredded cheddar cheese
In a large skillet over medium heat, cook the sausage - stirring occasionally - until browned and cooked through. Transfer to stacked paper towels. Set aside.

Add 1 Tablespoon of oil to the pan. Saute the peppers and onion until just tender - stirring often. Add the potatoes and cook until browned - stirring occasionally. Add the cooked sausage pieces and sprinkle with the seasoning. Stir to combine.

Reduce heat to low. Sprinkle potatoes evenly with cheese. Cover and cook until the cheese melts.


This is a great side dish for omelets and eggs. For more of a kick, add a chopped jalapeno in with the peppers and onion. Top it with a spoonful of your favorite salsa for a final touch.

Good stuff! Potatoes took a long time to cook - like 15 minutes, but it was worth the wait.

I made a double batch for our church breakfast and kept it warm in a crock pot during services. I got a lot of complements. I really think the extra time in the crock pot made it better. It got more flavorful or something. Thanks for a great recipe.
