Southwest Omelet
(2 servings) Printable Version
- 4 large eggs - lightly beaten
- 2 Tablespoons tomato - chopped
- 2 Tablespoons red or green pepper - chopped
- 2 Tablespoons onion - chopped
- 2 Tablespoons ham - diced
- 2 to 3 teaspoons salsa
- 1 handful shredded Cheddar cheese
- sour cream
While browning other side, spread salsa on with spoon; then add most of cheese. Fold over and place remaining cheese on top. Have sour cream on the side for extra flavor.
This easy-to-make omelet has ham, cheese, tomatoes, onion and green pepper. Use your favorite salsa to add more flavor and give you the level of spiciness you prefer.

This is awesome! I definitely recommend trying it. I added some Taco Bell sauce to it... only defined the taste even better! Wonderful recipe.
