Carrot French Toast
(2 servings) Printable Version
- 4 slices of bread - wheat or white
- 1/2 cup grated carrot (about 2 medium carrots)
- 2 egg whites
- 1 Tablespoon skim milk
- 1 Tablespoon walnut pieces - finely chopped
- 2 green onions - finely chopped
- butter or margarine - for frying
Heat a skillet or fry pan to medium-high and melt butter or margarine (about a Tablespoon) for frying.
Dip slices of bread into the carrot mixture. Cook until browned on both sides. Add more butter or margarine if cooking multiple batches.
Serve warm with a pat of butter. I like maple syrup too. My husband does not.
A savory take on traditional French toast from India. Try mixing sweet and savory by using a sweet topping like maple syrup. It's a surprisingly delicious combination.

At first was hesitant about adding the onions, but their presense made for an interesting taste experience which got better with each bite. Maple syrup was good for me.
