Ham and Cheese Crepes

- 12 basic crepes
- 12 thin slices cooked ham
- 1 and 1/2 cups shredded Cheddar cheese
- 1/2 cup sour cream
- 1/3 cup bread crumbs
- 3 Tablespoons butter - melted
- 2 Tablespoons green onion - chopped
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 teaspoon Dijon mustard
Preheat oven to 350 degrees F.
Sprinkle each crepe with 2 tablespoons of shredded cheese; top each with ham slice.
In small bowl, combine onion, salt, pepper, sour cream and mustard; mix well.
Spread about 1 tablespoon of the onion/sour cream mixture over ham slices.
Roll up the crepes and arrange in 13x9-inch baking pan.
Combine butter and bread crumbs; sprinkle over crepes and cover pan loosely with foil.
Bake for 15 to 20 minutes until cheese is melted.
Serve immediately.
This is a good, basic recipe, but the crumb topping makes it seem fancy. Be sure to use thin ham slices so you don't over-fill the crepes.

Super delicious - the sour cream mixture is awesome. I need to find ways to use this mixture on other stuff. I loved it and will add it my recipe collection for sure!

I didn't enjoy it until I changed the ham to bacon and then I really enjoyed it.

This is great! I made breakfast for my parents for New Year and my mother's birthday and they were fabulous - I substituted in ingredients here and there but it was great.

What a fantastic recipe for Sunday brunch. It was super easy and perfect even though it was my first attempt at these crepes.
I substituted a sweet onion because I didn't have a green one on hand. I also spread the sour cream before the ham because prep is much easier.
It was a breakfast that the whole family enjoyed.
