I just made this recipe at 8pm tonight to experiment for tomorrow morning... well, they were so good that my family ate every one of the pancakes and said "Mom these can't be yours because they are so good!" Great recipe pancakes. Always light and fluffy and very easy to do. At our house, I usually add fresh berries with just a touch of lemon or lime juice. It really brings out the flavor.

Good basic recipe to add ingredients to the pancakes before you flip them like blueberries or mini chocolate chips. I'd add some more flavor if eating plain, like cinnamon, nutmeg, etc. But overall, I really liked this recipe.

I just think it's more fun to put where u r from, I just finish cooking the panny's and they do taste good I like the texture of them and the directions were clear and very easy if some one had problems cooking there's it's because they didn't follow directions and cook them too fast so on that note they came out pritty good but if u like your panny's a little bit sweeter like me then add more sugar I did and they were good!!

So far I have mixed the batter. I had trouble beating the egg whites and added them when they were as best as I could get them. I am cooking the pancakes and they look very appetizing. They weren't as fluffy as they should be (that was my fault) and they weren't very sweet. With added toppings they seem fine.

It's probably something w/ the cooking temperature, but I followed this recipe exactly, but the pancakes came out very dense inside, toasted outside and they didn't rise very well (not spongy). Did I do something wrong? Please help!

Maybe its my cooking, but these turned out horrible. they became "dough" cakes... must be the baking powder do not do its things, but I had to mix the batter up enough dislove the flour, plus had to wait a 1/2 hour to find out they were no good...

I just made these pancakes for about 10th time this year. Always PERFECT. I used the optional vanilla and about a 1/2 teaspoon of cinnamon. Once we added about a tablespoon of chopped pecans to the batter and I'd recommend that for sure. Thanks for a great recipe. Loving the site.

i thought these pancake were... awful. they was hard as a rock and would cut after many slices with a very sharp knife. We found them good for playing frisbe and dodge ball... I suggest you take this recipe off here before anyone gets severely injures.

This was a great recipe. I made them just as it said and cooked them on a cast iron skillet with earth balance. I added raw pistachios and sliced bananas to each pancake once I put it on the skillet. when you flip them, the bananas get nice and fried.

I make these pancakes differently. I do not put in any oil because I prefer to butter the pan and I also put the eggs and milk in first and just a pinch of salt and then I mix it all together but this is the closest thing to greatness ever.

"Folding the whites in" means to gently mix the stiffened egg whites with the rest of the batter so that the air bubbles in the whites are not all broken. You can "fold" them in by spooning or pouring the whites on top of the batter. Then use a rubber spatula or wooden spoon to scoop up some of the batter underneath onto the top of the whites. Fold the batter and whites together a few times but don't stir or beat them together so much that the air bubbles are all crushed. Before you fold the stiffened egg whites, you'll need to separate the egg whites from the yolks and beat the whites until they are stiff. Use a non-plastic bowl (glass or metal) and a wire whisk like a balloon whisk. Beat the egg whites rapidly until they turn white and foamy. I prefer to stop before they turn too stiff and "dry" but they should be stiff enough to form small peaks when you lift them out. This looks like a good recipe, but I found that two the three tablespoons of butter is tastier than oil. Keep the salt for unsalted butter, and omit it if the butter is salted. The milk-to-flour quantities determine the thickness of the pancakes. I usually use one cup of each. It is important to understand the "leavening" of the beaten egg whites and chemical leavening of baking powder and soda. Beaten egg whites can make the cake fluffy as the hot air in the bubbles expand in cooking. Chemical reactions occur with sodium bicarbonate and other baking powder chemicals in water to release carbon dioxide gas that also bubbles and makes the texture of the cake fluffy. The amount you beat the egg whites effects how they respond in heat. At higher altitudes, overbeaten whites will blow out. Likewise, too much chemical leavening will blow up too soon before the cake has cooked sufficiently to hold the texture.
