Oatmeal Pancakes

(3 servings)    Printable Version
  • 3 cups quick-cooking oats
  • 1 quart soy milk soured with 1 Tablespoon lemon juice per cup
  • 1 cup flour
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 4 eggs - beaten
Combine all ingredients. The batter will be rather thin. Cook on hot griddle (spray if desired) until golden brown.

Cooking Note:

For more flavor, add a teaspoon of vanilla and 2 Tablespoons honey or sugar to the batter. If using a very sweet topping, you don't need to add a sweet element to the batter.

(The recipe submitter) refers to oatmeal... what kind of oatmeal.... isn't regular oatmeal high in carbs?

I am looking for the recipe of oatmeal pancakes where you have to scale the milk. I remember that that was the recipe that my mother had. I would really like to find that particular one.
