Orange Waffles

  • 1 Tablespoon active dry yeast
  • 1 cup freshly squeezed orange juice - warmed to about 120 degrees
  • 1/2 cup low-fat soy milk at room temperature
  • 1 Tablespoon canola or vegetable oil
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon orange oil OR 1 Tablespoon grated orange rind
  • 1/2 teaspoon salt
  • 2 and 1/4 cup whole wheat pastry flour
  • 1 teaspoon baking powder
This batter burns easily; so set your waffle iron on a low setting. If your waffle iron doesn't have a temperature setting, peek to see if the waffles are done when the waffle maker opens easily.

Dissolve yeast in warm orange juice and let sit for 10 minutes. Add remaining ingredients and stir well for several minutes. Let batter rest covered, in a warm spot for 30 minutes.

Heat waffle iron, pour in the appropriate amount of batter for your specific model, and spread to the edges of the waffle iron. Close and cook until gently browned.


These waffles use both orange juice and grated orange rind to get their orange flavor. They use whole wheat pastry flour, so also expect a natural, earthy flavor.

I thought the orange flavor was just right. Since they're orange waffles they should have lots of orange flavor. I actually used drizzles of honey as a topping and they were great. Would make again.

The orange flavor is a little overwhelming. Next time I would use 1/2 the orange juice and 1/2 of the grated orange rind, increase milk by 1/2 cup and maybe add a tablespoon of honey. Good but not super great.
