Hearty Egg Scramble
(6 servings) Printable Version
- 1/3 cup onion - chopped
- 1/4 cup green pepper - chopped
- 1/4 cup butter or margarine
- 2 medium potatoes - peeled and cooked
- 1 and 1/2 cups Julienned fully cooked ham
- 6 large eggs
- 2 Tablespoons water
- 1 dash pepper
Add potatoes and ham; cook and stir for 5 minutes. In a bowl, beat eggs water and pepper; pour over ham mixture. Cook over low heat, stirring constantly, until eggs are set.
A robust scramble with potatoes, ham and chopped vegetables. You could add cheese but you really don't need to with all the flavor going on.

This is an easy and yummy recipe. I topped it with shredded Pepper Jack cheese and a spoonful of salsa to make it a Mexican scramble.
