Tuna Melt Omelette

  • 2 medium eggs
  • splash of milk
  • half can tuna in brine drained mixed with mayonnaise
  • quarter cup cheddar cheese
  • salt and pepper
Beat the eggs together and fry on medium heat in a pan with oil and butter until half cooked. Add the tuna mayo mix and spread out evenly and cook for a further minute. Season with salt and pepper to taste. Sprinkle cheese on top and put under the grill until cheese has melted. Fold omelette in half and serve.


Replace full fat mayo with low fat mayo for a healthier option.
