Coconut Banana Oatmeal
(4 servings) Printable Version
- 1 cup quick cooking oats
- 1 cup water
- 1 cup coconut-flavored evaporated milk (or light coconut milk)
- 2 medium bananas
- 1/3 cup almonds - chopped
Reduce heat to low, place lid on saucepan and allow oatmeal to simmer, stirring occasionally.
Slice the bananas and stir through the oatmeal with the almonds.
Divide oatmeal among 4 bowls. Serve and enjoy!
For an extra coconut kick, top each serving with a sprinkle of sweetened shredded coconut.

I add either a tablespoon per person of extra virgin coconut oil or Healthy Addictions coconut spread. Major Coconut flavor and tons of health benefits!

This recipe would be good for adults as is but, since I am trying to get my kids to eat homemade oatmeal I dr.'d it up a bit. I added salt (to taste), coconut extract to have the coconut flavor really come out and brown sugar (to taste; I try to add ground flaxseed to cereal and oatmeals (about 1 tbsp.) I like to know what is my oatmeal and with these quick recipes, I can make them the night before and warm them up quickly in the am, as most us tend to rush. Thank you.
