Coconut Banana Oatmeal

(4 servings)

  • 1 cup quick cooking oats
  • 1 cup water
  • 1 cup coconut-flavored evaporated milk (or light coconut milk)
  • 2 medium bananas
  • 1/3 cup almonds - chopped
Place the oats, water and coconut milk in a saucepan and bring to the boil, stirring continually.

Reduce heat to low, place lid on saucepan and allow oatmeal to simmer, stirring occasionally.

Slice the bananas and stir through the oatmeal with the almonds.

Divide oatmeal among 4 bowls. Serve and enjoy!

For an extra coconut kick, top each serving with a sprinkle of sweetened shredded coconut.
