Cheesecake Pancakes

  • 2 cups milk
  • 2 large eggs
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter - melted
  • 1 cup cottage cheese
In a large bowl, beat the eggs with the milk. Add the sugar and vanilla and mix well.

In a separate bowl, combine the flour, baking powder and salt.

Combine the two mixtures and stir in the melted butter followed by the cottage cheese.

To make each pancake, dollop 1/4 cup of batter onto a well-greased skillet set to medium high heat (about 375 degrees).

Cook until both sides are lightly brown - about 2 minutes per side.

Serve warm with your favorite topping. I suggest strawberry jam and whipped cream.


This is a pretty easy recipe that has become a family favorite around our house. I hope you like it.

Batter is super runny - if I made them again I'd use half as much milk and add more by the Tablespoon as needed while stirring. I substituted half a teaspoon of vanilla extract and half a teaspoon of almond extract for the vanilla. It was DELICIOUS, but I might use a little less sugar next time.

This recipe seems promising, but it needs some work. I followed it to the letter and the pancake batter was very runny. This caused the pancakes to be extremely thin and unshapely. Also the pancakes were very greasy. Basically a waste of all the ingredients because I ended up dumping the batter down the drain :(

This recipe was all that it promised and then some. They're a little rich, so if you want a light breakfast, I wouldn't make them. But if you want to indulge a little, these are the way to go!
