Fruity Couscous

(2 servings)    Printable Version
  • 1 cup apple and blackcurrant juice
  • 1/2 cup couscous
  • 1 cup chopped fruit*
  • strawberry or vanilla yogurt
Place juice in a saucepan and bring to the boil.

Place couscous in the saucepan and stir constantly until juice is all absorbed.

Take saucepan off the heat and mix in fruit.

Serve into bowls with a dollop of yogurt on top.

Enjoy!!

* For the chopped fruit, anything that's fairly soft will work. Try one of the following or combinations of fruit as you prefer: banana, kiwi, pear, peach, berries, mango, etc.


Couscous is definitely not just for dinner. This fruity version with chopped fruit and a dollop of yogurt makes a terrific breakfast or snack.
