Blueberry Pancake Mix
(4 servings) Printable Version
- 1 one-pint wide-mouth jar
- 1 and 1/4 cup flour
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup brown sugar
- 1/2 cup dried blueberries
Add the brown sugar to the jar and pack it down.
Add the dried blueberries and pack it down.
Seal the jar.

Blueberry Pancakes

- 1 jar Blueberry Pancake Mix
- 1 and 1/4 cups milk
- 1 large egg - beaten
- 2 Tablespoons vegetable or canola oil
In a large bowl, mix the milk, egg and oil. Add the pancake mix to the wet ingredients and and mix until just combined.
Heat a skillet or frying pan to medium-high and give it generous coating of cooking spray. Dollop batter in 1/4 cup amounts to make each pancake. Cook until edges are dry and middles are filled with bubbles. Flip and cook the other side to golden brown (about 2 or 3 minutes per side).
Serve with butter and maple syrup. Enjoy!

This was a brilliant recipe and it tastes great! I am an American teaching English in Korea and can't get fresh blueberries for under $15 so I am stuck with dried ones. These pancakes were great. I made them for my Korean Husband for his birthday and he loved them. I also used them when I taught my students about American breakfast. The kids loved making these! Thanks for the great recipe!

Great recipe and great idea. Mr. Breakfast, you are my hero in these hard economic times. My only complaint is that dried blueberries are EXPENSIVE! Other than that, LOVED IT!

I just made this as a birthday present for a friend we call Violet (from Willy Wonka) because she likes blueberries so much. I mean she's like crazy. Anyway, she was thrilled. She said she'd let me know how they turn out. I'm ranking this recipe as awesome not based on the recipe, but on how cool and easy it was to make a great gift for a crazy friend.
