Migas (Tortilla Scramble)

- 8 large eggs
- 1 cup tortilla chips - crushed not crumbled
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup shredded Sharp Cheddar cheese
- 1/4 cup green onion - chopped
- 1 4-ounce can chopped green chilies - drained
- 1 small tomato - chopped
- 3 Tablespoons milk
- 1 Tablespoons butter
- 2 dashes salt
- 1 dash pepper
- as many dashes of hot sauce as you can handle
In a large frying pan over medium-high heat, melt the butter. Add onions and saute for about a minute until tender. If you wanted - at this point - you could add a little chopped green or red pepper or sliced fresh mushrooms (no more than 1/4 cup of each).
Pour egg mixture over onions and cook and stir entire dish as you would if you we're just making scrambled eggs (about 3 minutes).
When egg is almost completely set, stir in the cheeses, tomatoes and chiles.
Once the cheeses have melted, remove from heat and stir in tortilla chips.
Serve warm with hot sauce or salsa.
This recipe is dedicate to my mom who taught me that cooking with tortilla chips is the bomb... and to Mr Breakfast for letting me post my favorite recipe.

I used bag tortillas and sauteed them in salsa then added the eggs, cheese and roasted chopped peppers. So good!!

First time I made it, and it was delicious! I'm glad I found a great use for those leftover tortilla chips. Will make again for sure.

One of my favorite things to get at restaurants when they have it. It was a little complicated to make at home because of all the ingredients. But it was just as good as some I've had at restaurants.

This is a breakfast my mother would fix for me when I was growing up. We made it a little different in that we would saute the vegtables (onion bell pepper) remove them from the pan add a little EVOO and add tortillas cooking until lightly crisp. Then add the vegtables back in with the tortillas and pour egg mixture over all. Stir in cheeses tomatoes and chilies. This is also good without cheese or tomato or chilies. Of course be adventurous and add them, you will be delighted. Serve with a salad and cheese fries, pinto beans for a great dinner! Thank you for the recipe!
