Migas (Tortilla Scramble)

(4 servings)

  • 8 large eggs
  • 1 cup tortilla chips - crushed not crumbled
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded Sharp Cheddar cheese
  • 1/4 cup green onion - chopped
  • 1 4-ounce can chopped green chilies - drained
  • 1 small tomato - chopped
  • 3 Tablespoons milk
  • 1 Tablespoons butter
  • 2 dashes salt
  • 1 dash pepper
  • as many dashes of hot sauce as you can handle
In a large mixing bowl, beat the eggs with the milk. Add salt and pepper to taste.

In a large frying pan over medium-high heat, melt the butter. Add onions and saute for about a minute until tender. If you wanted - at this point - you could add a little chopped green or red pepper or sliced fresh mushrooms (no more than 1/4 cup of each).

Pour egg mixture over onions and cook and stir entire dish as you would if you we're just making scrambled eggs (about 3 minutes).

When egg is almost completely set, stir in the cheeses, tomatoes and chiles.

Once the cheeses have melted, remove from heat and stir in tortilla chips.

Serve warm with hot sauce or salsa.
