Power Oatmeal Pancakes
(1 serving) Printable Version
- 1/3 cup dry oats (oatmeal)
- 1 large egg
- 4 oz egg whites (about 4 but play around until you find what texture you like; more egg whites = thicker pancakes)
- 1 teaspoon vanilla
Pour into large bowl, let sit for 2 to 3 minutes.
Cook in a non-stick pan (or spray pan with PAM).
Top with Berries or whatever you like. (Note: these pancakes turn out more like crepes)
Turn your oatmeal into pancakes. Great for an energy boost first thing in the morning.

This is a great recipe. And worked wonders on and off a diet. Add some cut up strawberries, and/or blueberries, with some splenda and some sugar free syrup.. It's delicious! Feels like you're cheating!
