Maple Grapefruit Crepes

  • 1 grapefruit - peeled and sectioned
  • 1/2 cup grapefruit juice
  • 1/4 cup butter
  • 1/4 cup pure maple syrup
  • 1 Tablespoon cornstarch
Prepare 2 batches of basic crepes using THIS RECIPE.

Place completed crepes on a plate with a piece of wax paper between each crepe to prevent sticking.

To make sauce/filling:

In medium saucepan, melt the butter. Stir in cornstarch followed by the grapefruit juice and maple syrup. Bring mixture to a boil and allow it to boil for one minute -- stirring often until sauce has a syrup-like consistency.

Remove from heat and allow to cool for one minute. Add grapefruit sections.

Arrange folded crepes on serving plates and top with mixture.


A real nice mix of flavors with the tart grapefruit and sweet maple syrup.
