Low-Carb Pancakes (Wheat Gluten)
(1 serving) Printable Version
- 2 eggs
- 2 and 1/2 Tablespoons wheat gluten
- 2 Tablespoons heavy whipping cream
- 1 Tablespoon olive oil
- 1 Tablespoon water
- 1/2 teaspoon baking powder
- 1 teaspoon splenda or 1 packet other sugar substitute
Serve with butter and a low-carb store bought syrup. Or for an interesting low-carb topping, mix 1 Tablespoon of sugar-free jam with 1 and 1/2 Tablespoons water and microwave for 45 seconds.

These are wonderful. The texture is right. They are not complicated and they are enjoyed by everyone at my house. I leave out the sweetener and spread the batter thinner when I need something "bread like" to make a sandwich.

These were fabulous! I can't believe how much protein is in them - I input the info into a nutrition calculator and they come out to 27 grams of protein! Woohoo! I spread a little bit of peanut butter and then some Greek yogurt on mine... yummy! Thanks for the awesome recipe!

Thanks for the wonderful recipe, I served them to my husband and he never knew they were low carb, very impressed with how great these tasted, no weird aftertaste like many other low carb flours.

I can't believe how good this recipe is!! I've been doing low carb for 5 years, and have never had a recipe this good. They resemble french toast a bit more than pancakes, as far as the taste is concerned. Still, they are delicious!

By far the best recipe I have tried. My husband loves them and says they taste like regular pancakes to him. I do cook them in melted butter for added taste.

I like these a lot! Im not sure how they are plain, but when I serve them with butter and sugar free syrup they taste just like regular pancakes. MMM Good.
