Tofu French Toast

Tofu French Toast

  • 4 slices whole-wheat bread
  • 1/2 pound of soft tofu
  • 1/4 cup of soy milk or rice milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 cup of water
  • 1 Tablespoon of soy margerine
Mix tofu, soy or rice milk, vanilla, cinnammon, and water in a blender on liquify until you get the consistancy of two beaten eggs.

Prepare a large skillet on a heat just above medium with no-fat cooking spray.

Dip the bread into the "egg" mixture and gently scoot them around with your fingers -- flipping each piece so both sides are drenched and all the mixture is absorbed.

Start cooking the bread in the skillet. Brown each slice for about 3 or 4 minutes.


Anything goes topping-wise for this recipe: mushed banana, fresh berries, yogurt, jam, maple syrup or whatever you want to try. I hope you like it!

Surprise of the century... that this really worked. I didn't miss the eggs very much at all. Tofu is amazing when it's used right.

I just made this and it was great! I used vanilla soy milk and it was just like cinnamon french toast! I didn't use any butter.
