Thank you. I finally found what I was looking for. The recipe is a touch different from what my mom used to make. She used to scramble the mixture and roll it all in sugar when done.

I also add 2 teaspoons of sugar, a 1/2 teaspoon vanilla and one pinch of cinnamon. These are good just topped with powder sugar - simple and sweet.

I make this German Oven Pancake for dinner and double the recipe. While the batter is "resting", saute 3 peeled, cored, sliced apples with a bit of butter and brown sugar & touch of cinnamon. Next pour the apple mixture into the base of a 10" stoneware pie dish and then pour the batter over the apples. Bake @ 450 degrees F for 20 minutes. Perfect plus leftovers for an easy & delicious breakfast!

Add a pinch of cinnamon and a 1/8 teaspoon vanilla for a little more flavor. I like the idea from 'bashan' about doing them in muffin tins. I might try that next time. Thanks.

I like it better with 1 egg or maybe two if they are small. Melt butter with lemon wedges smash the lemon with a fork, pour lemon butter into the middle of the pancake and add powdered sugar then fold the pancake into a little package and eat!! It''s yummy!

These are awesome with fresh fruit (bananas, strawberries, blueberries, apples) add a little whipped cream or sprinkle with powdered sugar.
