I took advice of comment by Electra and added steamed asparagus tips to each serving. It felt like we were eating breakfast in a Beverly Hills hotel. It tastes and looks fancy but it's secretly pretty easy. In other words, I LIKED IT.

This recipe is wonderful, eggs benedict is my favorite breakfast food... My first time trying it, I didn't have any Canadian bacon, so I substituted... bologna. Having never eaten it before, I assumed it was similar to ham, plus, same circular shape! It didn't turn out too well, to say the least! I did learn that bologna is essentially round flat hot dog.

The hollandaise turned out beautifully though. 5 stars for sure, when I don't screw it up :)

For the sauce, add between 1/4 and 1/2 teaspoon of cayenne pepper instead of a dash and it gives it a nice, spicy kick.

Made it exactly like directed except used crispy strips of bacon instead of Canadian bacon. It was very, very good and made for a wonderful Sunday brunch. I recommend trying it that way. Delicious!

Using the blender for the sauce makes it a lot easier. Personally, I'd reduce the lemon in the sauce to 2 teaspoons, but other than that I say wow good recipe.

It's the best eggs benny recipe I've found on the internet so far. Hollandaise sauce couldn't be easier. People - try this recipe. Avoid other recipes out there that use mayonnaise. (they are never as good).

Hi. Thanks. Made the eggs benedict this morning and it was wonderful. We made it deluxe with both Canadian bacon and crispy bacon. The hollandaise was really good (maybe a little too much lemon - 3/4 tablespoon next time). Overall, it was excellent.

Very easy and my family and I really enjoyed this recipe. I did not have lemon juice and I like black pepper so I used a little lemon pepper and it was great. I also used just a bit more Dijon for that little extra zip. It was very good and was easier than I though it would be. Thanks.

These are also very good with a slice of good ripe tomato on the bacon, under the egg. A variaton is "Eggs Sardou". Replace the muffin with an artichoke bottom, omit the bacon, plate on creamed spinach.

My sister has frequent hospital visits out of town. In this larger city there is an all day breakfast place. The last time I visited I ordered the Eggs Benedict. Naturally loving to cook I came across this recipe on the search engine. So I tried it as it seemed quite simple. And it was simple. The only thing not simple about it was the fantastic taste!! What a great recipe. The only thing now is that I make the Eggs Benedict better than that all day breakfast place!

Thanks for finally teaching me to make hollandaise! You took the mystery out of it. This recipe is also great with steamed spinach in place of the Canadian Bacon (usually called Eggs Florentine).
