Pouvidla Pancakes

  • 1/2 cup lemon juice
  • 1 pound pitted prunes - finely chopped
  • 1 dollop of cottage cheese per serving
  • basic pancakes made from your favorite recipe
Slowly bring the lemon juice and prunes to a boil over medium heat. Once a rolling boil is achieved, remove from heat.

Stir this mixture well to break up the prunes (you might want to do this in a blender) and to get a smooth jam like consistency.

Spread this topping generously atop each pancake. Add a dollop of cottage cheese to each serving and serve.

This recipe comes from the Chek Republic. Dried apricots can be used in place of the prunes.
