French Toast Pockets

  • 12 large slices day-old French bread 1-inch thick
  • 2 large eggs
  • 1/2 cup low-fat milk
  • 1 Tablespoon orange juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 2 Tablespoons butter
  • 2 Tablespoons vegetable oil
  • 12 strips cooked bacon
Make a pocket in each bread slice by cutting halfway through each piece - of the way down into the top crust.

Whisk together eggs, milk, orange juice, vanilla, cinnamon and salt; reserve.

Heat butter and oil in a large skillet over medium-high heat. Insert cooked bacon into each slice of bread. Dip bread in egg mixture and cook on both sides until golden brown. Repeat until all bread slices are cooked, adding more butter and oil if necessary.

Serve immediately with fresh fruit, powdered sugar and maple syrup, if desired.


For this French toast recipe, you cut a little pocket into each slice of bread. That pocket then gets filled with the best surprise... bacon!

It tastes really good! I put egg and bacon inside my pockets. I made the egg mixture and bacon last night to shorten the time. It took me about 15 min. to make 2 pockets. I put some powdered sugar on top to finish it off. My husband called me from work and said the tasted awesome! He asked if I could make more tomorrow. Thanks for the great recipe!
