Apple Cheese Pancakes

  • 1 cup cottage cheese
  • 1 cup apples - coarsely grated
  • 1/4 teaspoon salt
  • 3/4 cup all-purpose flour
  • 1 Tablespoon honey
  • 1 teaspoon lemon juice
  • 1 Tablespoon almonds - chopped
  • 1/2 teaspoon cinnamon
  • 4 large eggs - separated
Separate the egg whites from the egg yolks. In a glass or metal bowl, beat the egg whites until stiff peaks form.

In a large bowl, beat the egg yolks. Add all remaining ingredients - except egg whites. Mix just until everything is combined - try not to over-mix. Fold in the beaten egg whites with a spatula.

Spray a griddle or skillet with cooking spray. Heat to medium-high and drop batter to form pancakes. Turn when bottom is browned. Cook other side to golden brown.

Serve warm with your favorite topping.


Cottage cheese gives these pancakes a smooth texture. Apples, almonds, cinnamon and honey make them sweet and full of Autumn-style flavors.

I liked the texture and creamy taste from the cottage cheese, however next time I'll probably reduce that to 3/4 cup and increase the flour to 1 cup so the pancakes hold together better. But overall, I liked these.

These are wonderful. I would suggest making an apple compote to serve with it.
