Hash Browns - Roasted

- 2 medium onions
- 2 medium potatoes
- 3/4 cup water
- 1 tablespoon virgin olive oil
- 1 teaspoon finely minced garlic
- 1/4 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
Peel and cut onions into bite sized wedges. Wash potatoes (leave skins on) and cut into 1/4 inch cubes. Put potatoes, onions and water into a 13"x9" baking pan. Cover tightly and roast 25 minutes; drain well.
In a large bowl, combine olive oil, garlic and paprika. Add potato and onion mixture; toss to coat.
Return mixture to baking pan, distributing it into a single layer. Crank up the heat to 425 degree's. Return baking pan to oven; roast uncovered another 20 to 30 minutes, turning every 5 minutes to brown. add salt and pepper, and serve.

Following the recipe to the T, except subbing veg stock for the water, this dish reduced to about a cup of product and left the baking dish burned, despite the fact it was being stirred every 5 minutes. The outcome was potato/onion porridge - nothing crunchy or golden.

I love this recipe but the amounts for the sauce are off. The amounts listed above only give the potatoes a lick a' taste and I like to really douse them.
