  • 1/2 cup chopped onions
  • 1/2 cup melted butter
  • 1 large (2 cup) bag size of shredded Cheddar cheese
  • 1 tube of Ritz crackers - crushed
Pour uncooked bag of hash browns into large bowl. Add the next 5 ingredients and mix well. Pour and spread evenly into a 13 x 9-inch ungreased baking dish. Sprinkle the crushed Ritz crackers over the top. Bake at 400 degrees F for 1 hour or until nice and brown and bubbly.

This terrific recipe is brunch favorite around our house. When pressed for time, I make it the night before and it still tastes great when reheated in the morning.

This is a family favorite - we've been making this for years!! We make cheesy potatoes for all the special occasions. You can even freeze in small containers and then cook later. Instead of crackers you can top with corn flakes. We usually leave ours plain with no toppings.
