Fruit-Rice Pudding

  • 2 cups cooked brown rice
  • 1/4 cup raisins
  • 1 cup crushed unsweetened pineapple
  • 3/4 cup hot water
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond flavoring
  • 3 Tablespoons frozen orange juice concentrate
  • 1/2 cup rinsed raw cashews
  • 1 medium banana
In a small casserole dish, mix together the rice, raisins, and pineapple. Liquify the remainder of the ingredients in a blender. Blend until smooth and creamy. Pour blended ingredients over the rice mixture and stir together.

Bake uncovered at 350 degrees F for 30 minutes.


This is sort of like a baked oatmeal, but with rice. It has lots of fruity flavor from banana, pineapple and orange juice. The raisins and cashews are optional but recommended.
