Plump Pumpkin Pancakes
(4 servings) Printable Version
- 2 and 1/2 cups flour
- 1 and 1/4 cup of buttermilk
- 1 teaspoon salt
- 1 and 1/4 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 cup pumpkin puree
- 2 Tablespoons brown sugar - optional
- 1 large beaten egg - optional*
* The egg helps the pancake hold together better, but you can make the pancakes without it if you're on an egg-free diet. They' just be more tender.
A nice touch is to use a pumpkin cookie cutter to make your pumpkin pancakes in the shape of a pumpkin.

I added water as needed, plus 1 Tablespoon of sugar. They came out just fine.

There's something funny about this one. You should really make the other recipe mentioned in the comments.

Just a guess, but the recipe seems incomplete. It contains no eggs, and 1 cup buttermilk w/ only 1/2 cup pumpkin puree doesn't look like enough liquid. Not an expert, but my guess is the recipe isn't showing all the necessary ingredients. I will try adding some eggs and see if that fixes the recipe.

Tried this pancake today. Not enough liquid too stiff only made good garbage.

We just tried this recipe for breakfast and before starting my wife was not sure about the amount of liquid (buttermilk) vs. the amount of flour. To make even the least bit usable we had to alter the amount of buttermilk to even mix it for use. Also, don't most pancakes have an egg in them. They were not very edible and were sent to the compost bin.
