Cottage Cheese Pancake

  • 1 cup cottage cheese
  • 6 large eggs
  • 6 Tablespoons flour
  • 6 Tablespoons vegetable oil
Whiz all ingredients up in the blender until smooth.

Spoon onto a hot griddle and turn as you would any other pancake - you know, when the bubbles appear, etc.

Incredibly easy pancakes: Just 4 ingredients and everything is mixed in the blender.

Wow, these were a lot better than I expected!! Very good actually and fairly healthy. The taste of egg is stronger in these than in normal pancakes, but the cottage cheese doesn't effect the flavor, so these taste pretty much the same as normal pancakes!

These are our family favorite, but we use 4 eggs, and 1/4 c flour and oil to one cup cottage cheese.

Very good and easy. I added frozen huckleberries to the top of the cakes before I flipped them over... Yummy!
