Apple Nut Muffins
(12 servings) Printable Version
- 1 and 1/2 cups sugar
- 3 large eggs
- 1 and 1/2 cups oil
- 3 cups flour - sifted
- 3 fresh apples - peeled and diced
- 1 teaspoon vanilla
- 1 cup walnuts or pecans
- 1 teaspoon baking soda
- 1 teaspoon salt
Mix well. Add the apples and nuts. Pour into a non-stick muffin pan and bake at 325 degrees for 20 minutes.
When you can insert a toothpick into the muffins and it comes out clean, then they are done.
An easy-to-make apple walnut or apple pecan muffin depending on your choice of nut. Vanilla adds a little more flavor. You could also add a teaspoon of cinnamon or a little fresh nutmeg.

This recipe has too much oil. There was a tablespoon of oil in the bottom of each muffin tin spot and they dripped oil for hours after baking.
