Easy Banana Bread

  • 1 and 1/4 cups all-purpose flour
  • 2 large eggs
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 3 medium bananas
  • 8 Tablespoons butter or margarine
  • 1/3 cup chopped walnuts (optional)
Cream sugar and butter, mash the bananas and add to the mixture.

Beat and add the eggs. Slowly add the flour, salt, and baking soda. (If desired, fold in the walnuts at this point.) Pour into a loaf pan.

Bake at 350 degrees F for 40 to 50 minutes.

Cooking Notes:

This recipe makes one 9 1/2 X 5-inch loaf or three 6 X 3 1/2-inch mini loaves.

I am constantly trying to find a banana bread recipe. So many failed recipes. Doesn't rise, raw in the middle or dense and bland. I decided to try one more time... when I came across your recipe. I doubled it, as I had 6 bananas in the freezer to use. I also used my food processor. I have to tell you... ITS THE ONE!!!! It made two perfect loaves. Thank you so much, I finally found a keeper!

Very good! I just made this recipe with my grandma and it smells (and tastes) very good. It's cooking as I type. Only thing different I did was too add cinnamon.

I'm far from a professional baker but I am glued to using your recipe after trying numerous recipes over the years. Your recipe never fails to satisfy the hungry taste-buds of my husband. Also, I recently switched and always make it in a bundt pan, it just gives it that add extra beauty visually.

The best banana bread recipe I ever made! I added chopped walnuts. I did as another person said to do as I baked it one hour and put tin foil over it the last 25 min so it would not burn. Thanks for sharing this recipe. So delicious! Nancy R.

I've never made bread, muffins or anything like that before. So I can say, from a genuine amateur perspective that it is REALLY EASY! Just as good or better than the (expensive) breads from the bakery at the grocery store. Good one!
