Apple Waffles

Apple Waffles

(6 servings)    Printable Version
  • 2 cups milk
  • 1 teaspoon cinnamon
  • 2 large eggs
  • 2 cups pancake mix
  • 1/3 cup butter or margarine - melted
  • 1 cup apple - finely chopped
Place milk, eggs, pancake mix and melted butter in bowl. Beat with mixer until batter is fairly smooth. Stir in apples.

Bake in hot waffle iron until steaming stops. Place in warm oven until just before the brunch starts then place on platter with fresh butter, syrup and preserves nearby.

One large apple usually makes 1 cup of chopped apple. I usually peel off the skin, but you don't have to. This recipe requires a store-bought pancake mix.

I can't find my 'make your own mixes' cookbook right now, or I'd post the recipe for pancake mix for you Kathy.

What do you do when you live in a country where you can't get pancake mix? Surely there must be a way to make these waffles with real ingredients and not the mix? I would love to try it. Can anyone help? Thanks Kathy from Germany
