Savory Miso Oats

  • 1 Cup Water
  • Pinch of Salt
  • 1/2 Cup Old Fashioned Oats
  • 1 TBSP Miso Paste
In a small saucepan, boil water, and when water is boiling, add the tiniest pinch of salt (I like smoked salt for this recipe). Add the oats and cook, stirring occasionally, until done. If you're adding the egg, at the same time you start the oats, boil enough water in another saucepan to cover an egg and add baking soda to the water (this makes the egg much easier to shell and doesn't affect the taste at all). When egg water is boiling, carefully lower the egg into the boiling water with a spoon, turn the heat down low enough so that it's just bubbling, and set a timer for 7 minutes. In your oatmeal bowl, add 1 TBSP of miso paste (I like red miso). When your oatmeal is done, add it to the bowl and mix well to combine it with the miso paste. If you're having this with an egg (which I heartily recommend), take the egg off the heat after 7 minutes and run it under cold water until it's cool enough to handle. Peel the egg and top your miso oatmeal with it. This is a perfectly soft-boiled egg, so the white will be set and the yolk will be deliciously runny, adding an extra dimension of flavor and nutrition to your miso oats. A little dash of soy sauce or Bragg's, and/or a few grinds of fresh black pepper can season this up nicely!

When someone suggested "savory oats" to me, it was a revelation. The recipe was basically the same as above, only with the egg and the soy sauce. The addition of miso paste is my own spin on the recipe, and really adds an incredible, healthy burst of flavor to it. Hope you enjoy it as much as I do!
