American Raspberry Crepecake

  • Use dry part of 1/2 boxed pancake recipe
  • 6 to 8 eggs
  • 1 1/2 cup of milk
  • 1 teaspoon vanilla
  • 1 stick real butter
  • 2 cups of sour cream
  • 1/2 cup of sugar
  • 1 additional teaspoon vanilla
  • 1 cup raspberries
  • 1 package raspberry jello
Take dry ingredients of boxed pancake mix and sift into bowl until no lumps appear (if it says serves 6-8 use 3-4 serving ingredients only).
Put eggs in bowl with milk and vanilla, add dry ingredients and whisk until thin and smooth. Fry in real butter - about 2 Tablespoons.

Put sour cream into a bowl mix with sugar and vanilla. Put aside.

In a pan mix raspberries with jello mix and 1/2 suggested water. Mix and cook until a jam like consistency. Or you can use a really good quality raspberry jam instead.

After cooking each "crepecake" spoon creamy mix on top and spread over cake. Swirl raspberry mix over cake. Add another cake and repeat the toppings.


This recipes uses a boxed pancake mix, raspberry jello and fresh raspberries to make layered pancakes that look like a crepe cake.
