Campground Skillet Breakfast
(6 servings) Printable Version
- 12 large eggs
- 2 15-ounce cans pre-cooked sliced potatoes - drained
- 1 medium onion - diced
- 1 cup milk
- 1 can Spam or canned ham - diced
- 2 Tablespoons butter or shortening
- salt - to taste
- pepper - to taste
Over a medium-low heat, melt the butter or shortening in a large skillet. Add the potatoes and onion and cook - stirring occasionally until just browned. Add the diced meat and cook a couple minutes longer. Add the egg mixture. Stirring occasionally, cook until the eggs have set and there is no more liquid in the pan. Season to taste. Enjoy.
This campfire skillet recipe has two of a gourmet camper's best friends: canned potatoes and Spam. Delicious in the great outdoors or the great indoors.

I've had this many times. It's great to wake up. Spam is an unsung hero of breakfast (at least camping breakfast). Hail Spam! Take your family camping... it's the BEST.
