Panko-Crusted Bacon

  • 6 slices of bacon
  • 1 egg
  • 3/4 cup panko crispy bread crumbs
Preheat oven to 400 degrees.

Beat the egg in a small bowl or mixing cup. Place panko crumbs on a plate.

Dredge each slice of bacon through the beaten egg and then through the panko crumbs. Press both sides of each slice gently into the crumbs for a more even coating.

Transfer slices to an ungreased cookie sheet. Bake for 20 to 25 minutes or until crisp and golden brown.

For gluten free, use finely blended Rice Chex. I used a generic.

It was different, in a good way. The downside is that the panko (at least for me) absorbed some of the grease. BTW... I agree with the previous comment: Bacon does indeed rock.

That looks amazing Mister Breakfast. I've seen a similar recipe where the bacon is encrusted in crushed pecans. Have you ever tried that? Bacon rocks!
