Breakfast Polenta With Berries & Vanilla

  • 1/3 cup stone-ground cornmeal or polenta
  • 2 cups low-fat or fat-free milk
  • 1 Tablespoon ground flaxseed
  • 2 Tablespoons oat bran
  • 1/4 teaspoon ground cinnamon
  • 1 pinch salt
  • 1 Tablespoon agave nectar (honey will also work)
  • 1/2 teaspoon pure vanilla extract
  • 1 cup fresh blueberries (raspberries or sliced strawberries are also great)
Pour the cornmeal into a 1-quart saucepan over medium heat. Stir for about 3 minutes until lightly toasted.

Slowly stir in the milk. Increase heat to medium-high and bring mixture to a boil - stirring often to avoid lumps.

When the mixture starts to boil, immediately reduce heat to a low simmer. Stir in the flaxseed, oat bran, cinnamon and salt. Simmer for one minute - stirring often.

Turn off heat, cover the pan and let set for 5 minutes.

Stir in the agave and vanilla.

Transfer to 4 serving bowls and top each with 1/4 of the fresh berries.

This is great. I used honey. Where can I get agave nectar? Does it taste like honey? Thanks for the recipe.
