  • 1 egg
  • 1 tablespoon dijon mustard
  • 1 tablespoon mayonnaise
  • Toast or English Muffin
Soft-boil the egg, about 3-5 minutes. The yolk should still be a bit runny, and the white should feel very soft when you remove it from its shell.

In a small bowl, mix the egg with the mustard and mayonnaise, until the color is mostly uniform.

Spread on toast.


Can easily be made to serve more - just add more eggs! I'd be careful about doubling the amount of mustard, however - it can easily overpower the dish. Find your personal ideal mixture.

Also good if you top toast with the spread and fresh tomato slices.

Really good as a snack - although boiling the egg is pretty tedious.
