Raspberry Oatmeal Pancakes

  • 1/2 cup prepared oatmeal
  • 6 egg whites - beaten
  • 1/2 teaspoon salt
  • 1 Tablespoon raspberry fruit spread (no sugar added)
  • 1/3 cup sugar-free maple syrup - for topping
Heat a small frying pan over medium heat for several minutes. Mix oatmeal, salt, egg whites and fruit spread together. Let stand for 5 minutes. Spray pan with non-stick spray. Pour mixture (in 1/4 cup amounts) into pan. Flip after approximately 5 minutes and cook for an additional five minutes on other side.

Serve topped with sugar-free maple syrup.


For low-glycemic diets, this recipe combines prepared oatmeal with beaten egg whites to make pancakes.

I substituted 3 whole eggs for 6 egg whites because we didn't have 6 egg whites handy, so if that's what did it in then it's my fault. But the pancakes tasted just like oatmeal and egg. I guess I was looking for fluff instead of mealy, and a more evident appearance of the raspberry (which I can barely taste). I probably won't make these again.
