Quick Oatmeal Multigrain Protein Pancakes

(1 serving)    Printable Version
  • 1 Packet Kashi vanilla hot cereal
  • 2 egg whites
  • 1/4 cup low fat whipped cottage cheese or low-fat ricotta
  • dash cinnamon
  • drop of vanilla extract
Spray olive oil on griddle or frying pan and heat to 375 degrees or med-high.
Mix ingredients together in large cereal bowl and spoon onto hot griddle or pan to make 3 4" pancakes.
Cook 3 minutes, flip and cook 1 minute on opposite side.

Bon appetit. This recipe packs the protein, fiber, healthy fats (flax in the cereal)and complex carbs you need to start your day right and stay heart healthy. Top with sugar free syrup, just cinnamon, or some super fruit for a completely balanced breakfast that will keep0 you full for hours and won't spike your sugar.

You can also use other instant oatmeal packets, but they are not as high in fiber or protein and usually contain much more sugar.
