Super Healthy Pancakes

  • 1 cup of Aunt Jemima whole wheat pancake & waffle mix
  • 1 cup Edensoy Light vanilla soy milk
  • 1 Tablespoon vegetable oil
  • 2 egg whites
  • 1 scoop of Isopure vanilla protein powder (zero carb)
  • 1 Tablespoon of cinnamon
  • 1 cup of blueberries (or fruit of choice)
Blend all of the above ingredients, except for the fruit. Warm the pan and coat with smart balance cooking spray. Pour in desired amount of mix for each pancake and add fruit while in the pan. Flip once you see bubbles.

Serve with Smart balance Soy butter & Syrup (sugar free versions available.)

Tip - Warm the syrup in a pot or the microwave before the last pancake is done. When you pour it over the pancakes, it will warm them up.

This simple breakfast has fiber, soy, protein & fresh fruit and can easily be dairy free if egg substitutes are used. Adding the protein powder is also great for vegetarians who don't eat meat for protein. Turkey bacon is a great compliment.


This is my way of making whole wheat pancake mix even healthier by adding protein powder and blueberries (antioxidants) and using egg whites and soy milk. It works for me every time and it's delicious.
