Quick Molasses Bread

- 2 cups whole-wheat flour
- 1/2 cup soy flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 teaspoons baking powder
- 2 eggs
- 1/4 cup oil (like Canola)
- 1/4 cup molasses
- 3 Tablespoons honey
- 1 teaspoon grated orange peel
- 3/4 cup milk
Stir together whole-wheat and soy flours, cinnamon, salt and baking powder. In another bowl, beat eggs together with oil, molasses, honey, orange peel and milk.
Stir liquid mixture into dry ingredients and carefully combine. Batter will be stiff.
Turn into a greased 8 x 4 x 2-inch loaf pan. Bake for 30 minutes, or until wood toothpick inserted in center comes out clean.
Makes 1 loaf.
