Quick Molasses Bread

  • 2 cups whole-wheat flour
  • 1/2 cup soy flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2 eggs
  • 1/4 cup oil (like Canola)
  • 1/4 cup molasses
  • 3 Tablespoons honey
  • 1 teaspoon grated orange peel
  • 3/4 cup milk
Preheat oven to 375 degrees.

Stir together whole-wheat and soy flours, cinnamon, salt and baking powder. In another bowl, beat eggs together with oil, molasses, honey, orange peel and milk.

Stir liquid mixture into dry ingredients and carefully combine. Batter will be stiff.

Turn into a greased 8 x 4 x 2-inch loaf pan. Bake for 30 minutes, or until wood toothpick inserted in center comes out clean.

Makes 1 loaf.

Gary Collins' intro for this recipe in The Hour Magazine Cookbook reads as follows: "I knew about Tim Reid from WKRP In Cincinnati and about his current role on Simon & Simon, but I didn't know that Tim is a fitness freak with an affinity for health foods. Here he offers us a quick and healthy molasses bread!" TV fans know Tim Reid best as the character DJ "Venus Flytrap".
